I first discovered Lafayette's biscuit scene by chance when getting a latte from a local coffee shop.
I visit the area about once a month or so for work, and Reve Coffee Roasters' downtown location is near my office. When I saw the blueberry buttermilk biscuit inside the display, I knew I had to try it.
Since then, I've been on a hunt to try other beloved biscuits across the city. I found out the secret to Reve's recipe, then felt right at home when I walked into Edie's and had a delicious breakfast and met the owner and several of the workers.
Next on my list was a trendy brunch spot recommended by a many locals: Parish Biscuit Company.
The restaurant was busy early on a Monday morning, and every single person I encountered on staff said hello and offered assistance as I went to the back counter to pick up my to-go order.
I tried a plain biscuit with honey butter and strawberry jam on the side. It was the most logical choice to compare to the biscuits I had eaten at Reve and Edie's, though the creative biscuit sandwiches named after Louisiana parishes also caught my eye.
The biscuit was bigger than my palm and was lathered in salty butter. The dough was flaky and felt like a southern grandma's recipe. It was moist and did not crumble as I dug in.
I liked the biscuit on its own, but many Parish customers confirmed it is even better used as a sandwich vessel. My next one will be the Orleans Parish biscuit, which is an Acadiana take on the muffuletta.
